Aberargie whisky distillery
Aberargie is a farm-based single malt distillery near Perth in Perthshire, Scotland. Built by the Morrison family on their 300-acre farm at Aberargie, it began production in autumn 2017 as a barley-to-bottle operation with locally grown grain and water from a private well.
House Style
A Lowland-designated single malt aiming for a rich, fruity and subtly waxy character. Light peat may appear in occasional runs, but the core profile focuses on orchard fruit, honeyed malt and texture.
Production of Aberargie whisky
- Barley & Water: Farm-grown barley varieties including Golden Promise; water from a deep on-site well.
- Milling & Mashing: Traditional mash with a focus on clear wort to encourage fruit-driven esters.
- Fermentation: Around 72 hours to balance fruitiness and weight.
- Stills: Two copper pot stills with descending lyne arms (approx. 15,000 L wash; 10,000 L spirit).
- Maturation: Predominantly American oak ex-bourbon with selective sherry casks.
- Scale: Target capacity up to roughly 750,000 LPA per annum.
