What is Pedro Ximénez?
Pedro Ximénez is a type of grape that is commonly used in the production of fortified wines, such as sherry. The grape is thought to have originated in the region of Andalusia in southern Spain, where it has been grown and used in the production of wine for many centuries. Genetic testing suggests that the grape is a decendant of the Gibi grape, which originated in the Arab world. Today, Pedro Ximénez is grown in a number of wine-producing regions around the world, and is highly valued for its rich, sweet flavor and its ability to produce high-quality fortified wines. PX Grapes
Characteristic of the PX is the uneven formation of the grapes, in which thicker and thinner berries are often found together as well as uneven bundling of the berries. PX maturation

Great sweet wines
The grapes of the Pedro Ximénez variety are large and have small to medium-sized berries with a thick skin. The variety is vigorous and very susceptible to botrytis. It is also high in alcohol and quite low in acid. This makes it an ideal basis for fortified sweet wines such as the formerly famous sweet wine from Málaga as well as for the particularly sweet variants of sherry and montilla from the Jerez neighboring region of Montilla-Moriles . In Jerez, the sherries with natural sweetness are called Vinos de Jerez Dulces Naturales. These sherries are either made from the Moscatel grape variety or also from Pedro Ximénez, which is often simply abbreviated to PX on the labels.To create this type of sherry, overripe grapes are dried on mats in the sun for two weeks. The raised grapes are then fermented and fortified at 10% alcohol with alcohol to about 15 to 17%. In Montilla-Moriles, however, dry Finos are also made from PX. In addition, there are now some experts who produce complex and at the same time fresh wines from the variety in Málaga or in Priorat .
Why are PX casks used for maturation?
Pedro Ximénez casks are very popular for ageing whiskey for their sweet flavors and aromas dominated by dried fruit. Maturation in PX casks also gives whiskeys an extra touch of fruity sweetness. With a volume of around 600 liters, the oak barrels from Spain are significantly larger than ex-bourbon barrels or hogsheads.
Variants of PX-Cask maturation
- A single malt with a PX sherry finish often matures first in ex-bourbon barrels and finally for a few months/years in a PX sherry cask
- Parallel maturation, part of the whiskey is stored in ex-bourbon barrels and another part in PX sherry casks. A marriage of both varieties then takes place.
- Full aging in Pedro Ximénez casks is very rare due to the intense aromas of the casks. As a rule, PX casks are used to give the whiskey a sherry finish.
The flavors from the PX casks can quickly become dominant and overwhelm the finer flavors of a single malt, so they are typically used at the end of maturation to finish the whisky .
What flavors do Pedro Ximénez casks bring to the whiskey? Pedro Ximénez oak casks are known for imparting fruity and sweet flavors to the whiskey. The most important aromas include notes of dried fruits such as raisins, apricots, dates and figs. Typical for whiskeys matured in Pedro Ximénez casks is a full and soft, creamy mouthfeel - whereby the character of the whiskey of origin is of course also decisive.
