Cadée Distillery was founded in 2013 on Whidbey Island by Colin Campbell, a Scotsman. Despite this the distillery is primarily releasing bourbon and rye whiskies as well as a line of other spirits and liquers.
The distillery was established in 2015 after a flexible Indiegogo campaign. Its name Cadée, means “pure” in Gaelic.
How Is Cadée Produced?
Colin Campbell calls his spirits quasi-sourced in that he got the raw distillate for the first batches from “different partners throughout the US,” before being brought to Whidbey for aging.
It is in the aging where Cadée Scottish side emerges, making use of barrels from Kentucky, Portugal, Spain and the Caribbean. Campbell monitors the flavor profiles of his aging whiskey and blends them when ready, resulting in the current two bottlings which are on the market:
- Deceptivus Bourbon Whiskey
- Cascadia Rye Whiskey
- Straight Bourbon Whiskey
- Straight Rye Whiskey
